# Expert Advice:

01 -
  • It tastes like spring arrived on your plate, without any heavy cream or complicated techniques getting in the way.
  • You can throw it together in the time it takes to brew coffee, making it the perfect excuse to use good fruit whenever you have it.
  • It's the kind of dish that makes people think you fussed, when really you just trusted the ingredients to speak for themselves.
02 -
  • The difference between a fruit salad that tastes like breakfast and one that tastes like something memorable is in the restraint—undersweeten and let the fruit's natural sugar carry the day.
  • Don't prep this more than a few hours ahead; citrus juice will soften the berries and while they won't spoil, they lose their firm, fresh bite that makes them worth eating in the first place.
03 -
  • Zest your citrus before you cut it open—it's infinitely easier, and you'll get more flavorful zest because you're not fighting with a cut fruit.
  • If berries are out of season or expensive where you are, frozen berries thawed gently work beautifully and cost nothing like their fresh counterparts.
