# Expert Advice:

01 -
  • Everything tastes better on a stick, and these hold up without getting soggy even after twenty minutes on the counter.
  • You can prep the chicken and assemble the skewers an hour ahead, then drizzle the dressing right before serving.
  • Theyre filling enough to feel substantial but light enough that guests keep coming back for more.
02 -
  • Dont skip letting the chicken rest after grilling, hot chicken will steam the lettuce and make it limp and sad.
  • If your croutons are on the smaller side, use two per skewer so you get enough crunch in every bite.
  • Drizzle the dressing just before serving, if it sits too long the croutons turn soggy and lose their snap.
03 -
  • Char the chicken just enough to get color but not so much that it dries out, a little pink on the grill marks is perfect.
  • If youre using wooden skewers instead of cocktail sticks, soak them in water for 10 minutes first so they dont burn on the grill.
  • Grate Parmesan fresh right before serving, it smells incredible and melts slightly on the warm chicken.
