# What You Need:

01 - 2 medium oranges, thinly sliced
02 - 1 cup granulated sugar
03 - 1 cup water

# Directions:

01 - In a medium saucepan, combine 1 cup sugar and 1 cup water. Bring to a simmer over medium heat, stirring until sugar dissolves completely. Add orange slices in a single layer and simmer gently for 12 to 15 minutes, turning occasionally, until rinds become translucent. Carefully transfer orange slices to a parchment-lined tray and allow to cool completely, approximately 10 minutes.
02 - In a mixing bowl, combine 2 cups Greek yogurt with honey or maple syrup if using, and 1 teaspoon vanilla extract. Mix until smooth and well combined.
03 - Spoon a layer of prepared yogurt into the bottom of each parfait glass or jar. Add a layer of granola followed by several pieces of candied orange. Repeat layering, finishing with yogurt on top and arranging candied orange slices as decoration. Sprinkle with additional granola and toasted almonds, then garnish with mint leaves if desired.
